Cowboy Stew

This warm recipe should make everyone happy and cozy on these remaining wet and cold days of winter. 

It is an quick and easy prep.

What you need - 

  • 5 slices of bacon
  • 2 beers
  • 1 (12 oz) of kielbasa sausage
  • 2 lbs of ground beef
  • 1 medium white or yellow onion
  • 3 cloves of garlic
  • 3 tablespoons of flour
  • 1 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 1 tsp of chili pepper
  • 14 oz of diced tomatoes w/ the liquid, do not drain
  • 1 cans of baked beans (HECK YEAH!)
  • 7 oz of green chilies
  • 15 oz of sweet corn w/ the liquid
  • 2 medium russet potatoes
  • 2 tablespoons of chopped parsley

Cook the bacon until crispy and drain. Open a start drinking one of the beers. Using a big pot, transfer 4 strips of bacon, into the pot, eat one strip of said bacon, add sausage, beef, onion, and garlic. Brown until ground beef is cooked. Sprinkle flour and all other dried seasonings over beef and cook for 1 minute. 

Add the corn, 1/2 a beer, drink the other half, continue adding tomatoes, baked beans, chilies, & potatoes. Simmer for 1 hour. Add water as needed. Garnish with parsley when serving.
