Oxtail it is!

Well, much to my surprise, I didn't even know that oxtail was a thing until G Farms.

Years ago, it came from the tail of oxen. Now a days it is the tail of beef cattle. Apparently, it is an amazing source of protein and has a variety of ways to prepare it. Braising it in a slow cooker for up to 3 hours turns the Cartlidge and bone into gelatin which is amazing for flavor.
